Watermelon Mint Mojito
A few weekends ago I had the pleasure of spending the day with Thomas at the famous Old Port Festival. Because we are “old”, we were looking for somewhere to escape the crowds for a few minutes and grab a bite to eat.
We ended up at the newly opened Luke’s Lobster on the Portland Pier. While waiting for our table, we saddled up to the bar for an adult beverage. I got a drink called “More Fun Than Humans.” Maybe I’m not cool enough to get the name but it was essentially a watermelon margarita with tequila, lime juice, watermelon juice, and triple sec. It was absolutely brilliant.
And I was inspired AF to come up with a watermelon drink of my own. I wanted something a little lighter, a little more refreshing than a margarita. A mojito seemed like the perfect compromise with cool, fresh mint and club soda to balance the white rum and sweetness of the watermelon.
If you plan on spending time on your deck, by the pool, or sitting in front of the AC unit in your undies this summer, this mojito will be the perfect addition to your day.
Watermelon Mint Mojito
½ cup seedless watermelon, cubed
2 oz white rum
5 mint leaves plus more to garnish
Juice of half a lime
2 tsp sugar
Club soda
Ice
In a glass, muddle together watermelon, mint, lime juice, and sugar.
Add rum and fill glass with ice cubes.
Top off glass with club soda and stir to combine.
Garnish with more mint
If you want a smoother drink, blend the watermelon and strain through a fine mesh strainer. Add the watermelon puree after muddling mint, lime, and sugar. Personally, I like the slight chunky, imperfectness of muddling my watermelon right in the glass.
