Pineapple Coconut Rum Punch
It’s National Rum Day! And you know what that means…I’m bringing you another cocktail recipe! These posts are some of my favorite to develop, photograph, and edit. And not just because I get to drink the fruits of my labor but because I’ve always had a love for the art of mixology. Even before I was old enough to drink, I appreciated the subtle art of mixing together ingredients in exact proportions to create something new.
This love of mixing translated into my other hobbies, like baking, and my career, of course. And now, I get to share this love with you. And that brings me so much joy!
Rum is not my go-to spirit. I’m a whiskey gal. It’s the Leo in me but there is something special about rum in the summer. Rum, with it’s strong ties to the Caribbean, evokes an image of island life in my mind.
Of course the classic piña colada comes to mind but, in light of my recent Whole30 experience, I wanted to make something a little less…caloric. A frozen piña colada, laden with sugar and full-fat coconut cream, is more of a meal than a drink and I’m not about that life right now.
I took the basic flavors of the piña colada and created this Pineapple Coconut Rum Punch. I hope you enjoy!
Ingredients (makes 1):
2 oz white rum
2 oz coconut water
2 oz pineapple juice
Ice
Pineapple rings to garnish
Method:
To an cocktail shaker or mason jar, add rum, juice, and coconut water
Fill with ice
Shake vigorously
Serve
This punch is so simple to a make. It’s refreshing and light and perfect for a beach day. So, of course, I took it to the water!
